Chocolate Malibu Rum Strawberry Cake w/ Whipped Vodka Frosting

A colleague of mine recently retired after 42 years of service to the company. Forty-two years!!! That's unheard of in software development, isn't it? I worked on the same development team as him for a couple of years and was asked to make a cake for a small retirement party with a group of friends. The company actually hosted a retirement party for him with a giant cake and table of pastries the week before. I think over four decades of service demands such a company sponsored retirement party, don't you? They even gave him some fancy gifts and thoughtful speeches. I made a "caketini" or "caketail" for the party. The inside was a bit messy - a filling of vanilla pudding, whipped cream, bits of strawberries, and Malibu rum.
I made a vanilla "whipped cream" frosting using Pinnacle Whipped Vodka. As I've said before, if you aren't putting at least half a cup of vodka into your frosting recipe, then you aren't doing it right ;) Booze can certainly add a nice dimension to frosting.
